FEBRUARY 5, ‘25 // One-Bowl Banana Muffins INGREDIENTS: • 2 Ripe bananas • 2 Tsp. vanilla extract • ½ Cup oil • 1/3 Cup sugar • 1/3 Cup brown sugar • 1/3 Cup almond milk • 1 Egg • 1 tsp. cinnamon • ½ Tsp. ground ginger • ¼ Tsp. ground cloves • ½ Tsp. salt • 1 ½ Baking soda • 1 ¾ Cup flour DIRECTIONS: 1. Preheat the oven to 375°. 2. Line 12 muffin pans. 3. In a large bowl, mash the bananas until smooth, whisk in the oil and vanilla until combined. Whisk in the sugar, milk and eggs. Stir in the spices, salt and baking soda. Mix until combined. 4. Scoop the batter into the muffin tins. 5. Bake for 15-20 minutes.minutes (optional). 6. Ladle into mugs and serve warm.
